Healthy Peanut Butter Cookies

It’s the new year, the holidays are behind us, and holiday treats might be a thing of the past if you’re starting your New Year’s Resolutions now. You can still enjoy food you love, though, in healthier versions and still get results. These healthy peanut butter cookies might be appropriate for you if you want something with whole grains, healthy fats, and minimal added sugar. Enjoy!

Ingredients:

110g creamy natural peanut butter
46g egg whites
2 tbsp maple syrup
958g apples (cut up, but leave skin on)
600g organic oats
1 tsp vanilla extract

Directions:

Preheat oven to 350 degrees. Line cookie sheets with parchment paper.

Cut up apples, leaving the skin on. Place apples in the blender and blend until there are very few apple chunks remaining. Next, in a food processor, blend the oats until you have a fine oat flour. Mix the apples and oats in a large bowl. Add the vanilla, egg whites, peanut butter, and maple syrup, then mix.

Drop spoonfuls of cookie dough (a 2 tbsp cookie scoop makes this super easy) on the cookie sheet a couple inches apart. I sprinkled some with pumpkin pie spice, and to some I added a few chocolate chips. You don’t have to do either; they’ll be good regardless.

Bake for 12 mins at 350 degrees.

Makes 66 cookies.
