Everyone loves muffins, right?
Except that the kind we tend to like are actually cupcakes in disguise—just missing the frosting.
Try this healthy version instead. They’re lower in sugar but still have sweetness from the apples, and they’re far lower in carbs than most muffins.
Apple Cinnamon Raisin Muffins
Ingredients:
17g raisins
2 medium-sized apples
2 tbsp almond butter
1.5 cup steel cut oats
1 egg
2 tbsp coconut flour
Generous amount of pumpkin pie spice
Directions:
Preheat oven to 350 degrees. Line muffin tins with 9 baking cups. Peel and cut apples. Add apples, almond butter, oats, egg, pumpkin pie spice, and coconut flour to blender. Sprinkle raisins on top of muffins, and sprinkle with a tad of pumpkin pie spice.
Bake at 350 degrees for 25 mins.
Macro breakdown: 9 muffins yield 2.5g fat and 15g carbs each.
