Looking for a new way to cook your chicken? Look no further!
This recipe skips the bread crumbs and other ingredients that many “crusted” chicken recipes use. The result is a lower carb, high protein chicken dish with some healthy fats from the pistachios
Pistachio-Crusted Chicken
Ingredients:
3-4 boneless skinless chicken breasts
1 bottle French’s Dijon Mustard
Generous amount of fresh rosemary
1 tbsp Italian seasoning
2 cups of pistachio nutmeats
Paprika (optional)
Directions:
Preheat the oven to 350 degrees. Grind the pistachios in a food processor until they’re the consistency of bread crumbs. Place the pistachios on a plate. Empty the mustard into a bowl, and mix in the seasonings. Generously coat each chicken breast with the mustard mixture, and then coat with pistachios. Bake for 20-25 minutes.
Optional:
Sprinkle paprika on top of each chicken breast right before baking for a little extra flavor.
